This dish is strictly street/restaurant or bier bari food (wedding banquets). I mean, you will rarely find a Bengali epicure serve “fish fry” as part of a home-cooked Bengali meal.

Ingredients
500 grams of Fish fillets.
For marinade
- 1 medium size onion.
- 8-10 cloves of garlic.
- 2 inch ginger.
- 4 green chilli
- 10gm of coriander.
- 10gm of parsley.
- 10gm of mint leaves.
- 2 tbsp fresh lime juice (Gondhoraj lebu).
- 1 tsp black pepper powder.
- salt to taste.
- 2g of Garam Masala.
- ¼ tsp MSG (Note: No, MSG won’t kill you.Recent studies have busted the myth that MSG is harmful).
- 50g of Maida (Plain flour)
- 2 Eggs
For breading
- 2 cups of bread crumbs.
- 4 Eggs.
- Salt to taste.
- ⅕ tsp of black pepper powder.
For deep frying
- Oli.
Instructions
A great fish fry depends entirely on a good fillet of fish to get large-sized fillets, choose fresh Bhetki about 3-5 kg in weight make sure you discuss the desired fillet size with your fish vendor beforehand and ask them to removed the bones and the skin. each fillet is trimmed to form neatred rectangles.
In a food processor put the chop onion, ginger, garlic, coriander, mint leaves,parsley, green chilli, fresh lime juice, black pepper, salt to taste and MSG grind to a smooth paste.
The fish fillets will be marinated in twice.
First Marination of Fish Fillets
Make sure that the fish should be any excess moisture and keep the paper towel to dry the fish.
In Bowl take the fish fillets and add the grinded paste and cover it and keep the fish in refrigerator for at least 30 minutes.
Second Marination of Fish Fillets
Now, take out the fish from refrigerator and put into a bowl and add 2 eggs, maida(plain flour) and aad salt according to your taste and mix it well very gently.

MODIFIED PROCESS
We’re adding flour + egg to the marinade directly. This helps the marinade stick to the fish, so that it forms a distinct, flavourful layer between the fish and the coating.
In another shallow bowl, beat eggs with salt until well blended. Next, dip each fish fillet first in the egg mixture and then coat with bread crumb mixture. Double-bread for firmer and crispier fries and straighten the side.
Heat enough oil in a pan for deep frying. Fry the fish fillets in medium flame until the fish turn golden brown.
Now your Fish Fry ready to eat.
